Pasta Salad

Serves: 6
Ingredients:
- 500 g pasta shells/bowties/spirals
- 175 g sundried tomatoes, chopped
- 200 g Mozzarella, cubed
- 125 g salami, chopped (optional)
- 60 ml basil pesto
- 80 ml SAFARI Italian Dip and Drizzle Vinaigrette
- Salt and freshly ground black pepper to taste
- 30 ml shredded basil
*Add diced smoked chicken, or sliced chorizo instead of salami.
Method:
- Cook the pasta according to the instructions on the packet.
- Drain and set aside to cool.
- Once cool, add the sundried tomatoes, Mozzarella, salami*, pesto and vinaigrette.
- Toss to mix.
- Season to taste.
- Sprinkle shredded basil over before serving.
