Pasta Salad

Serves: 6

Ingredients:

  • 500 g pasta shells/bowties/spirals
  • 175 g sundried tomatoes, chopped
  • 200 g Mozzarella, cubed
  • 125 g salami, chopped (optional)
  • 60 ml basil pesto
  • 80 ml SAFARI Italian Dip and Drizzle Vinaigrette
  • Salt and freshly ground black pepper to taste
  • 30 ml shredded basil

*Add diced smoked chicken, or sliced chorizo instead of salami.

Method:

  1. Cook the pasta according to the instructions on the packet.
  2. Drain and set aside to cool.
  3. Once cool, add the sundried tomatoes, Mozzarella, salami*, pesto and vinaigrette.
  4. Toss to mix.
  5. Season to taste.
  6. Sprinkle shredded basil over before serving.
