Greek Salad

Serves: 4

Ingredients:

  • 4 ripe juicy tomatoes, cut into quarters
  • 1 English cucumber, cut in half, flesh scooped out and then sliced into 1 cm slices
  • 1 green pepper, halved and sliced
  • 1 red onion, halved and sliced
  • 125 ml pitted Calamata olives
  • Salt and freshly ground black pepper to taste
  • 5 ml dried oregano
  • 60 ml SAFARI Dip and Dress Greek vinaigrette
  • 125 g feta cheese

Method:

  1. Place the tomatoes, cucumber, green pepper, onion and olives in a large salad bowl.
  2. Season to taste and sprinkle the oregano over. Toss gently.
  3. Pour the vinaigrette over and toss lightly.
  4. Arrange the feta on top.
  5. Serve with crusty bread and vinaigrette on the side.
