Balsamic Glaze

Serves: Makes 250ml
Ingredients:
- 500 ml Safari Cape, Cape Apple or Cape Rosa Balsamic Vinegar
- 180 ml brown sugar
- A pinch of salt
Method:
- Pour the balsamic into a small saucepan. Add the sugar and salt and stir until the sugar dissolves.
- Bring to the boil and boil until the mixture thickens and is reduced by about half.
- The mixture should be syrupy and cover the back of a spoon.
- Drizzle over Caprese salad, your favourite pizza, roasted vegetables or over bruschetta topped with pesto, fresh tomato and shaved pecorino cheese.
