Balsamic Glaze

Serves: Makes 250ml

Ingredients:

  • 500 ml Safari Cape, Cape Apple or Cape Rosa Balsamic Vinegar
  • 180 ml brown sugar
  • A pinch of salt

Method:

  • Pour the balsamic into a small saucepan. Add the sugar and salt and stir until the sugar dissolves.
  • Bring to the boil and boil until the mixture thickens and is reduced by about half.
  • The mixture should be syrupy and cover the back of a spoon.
  • Drizzle over Caprese salad, your favourite pizza, roasted vegetables or over bruschetta topped with pesto, fresh tomato and shaved pecorino cheese.
